Sous vide doesn’t just save our customers time, it provides a dining experience like no other. Sous vide means “under vacuum” in French. Here’s how it works. We place the lamb in a sealed bag, before immersing it in a bath of water which is kept at a steady temperature of around 600C. It’s steeped in the water for a very long time – long enough to cook well through, and for the seasoning to permeate thoroughly. But because the temperature is so far below boiling point, the cellular structure of the meat remains intact, retaining a wonderful texture.
When cooking is complete the meat is cooled, still in its bag. The seal keeps out oxygen and other contaminants, meaning that when we deliver it to you, you can keep it until you’re ready to use it. When you are, just remove the lamb from its bag, finish it in your own oven to roast the exterior, and serve it to your delighted diners.
